I Can’t Eat Pizza Again. Ever.

It’s true. I can never eat pizza again. And it is not because I am tired of pizza or that I had a bad pizza. It is because I am afraid of losing the taste of the amazing pizza that I experienced while in Napoli.

My gastronomic goal while in Napoli was to visit Pizzeria da Michele. This old pizzeria has been passed down through generations since 1870 and is said to have the best pizza in Napoli. Napoli is said to have the best pizza in the world. Therefore, this pizza, the pizza of Pizzeria da Michele, must be the best pizza in the world. And you know what? I think it was the best pizza I had ever eaten, and I have had my fill of pizza in Italy!

When we got to the pizzeria, a huge crowd was already gathered around the door, waiting for their table. We waited about an hour and then we were finally let in. Our table was right by the ovens. We had a great view of the baker and watched as the quickly slipped the thin, floppy pizzas next to the wood-burning fire.

The dough was thin, but soft. The sauce was sweet. I even got double mozzarella; that is, double buffalo mozzarella! It was heaven.

Cucina Italiana: Pizza Margherita

JC and I decided to try our hand at pizza tonight!

Pizza Margherita is the basic tomato and cheese pizza that was invented in Napoli. This iconic food is so simple, yet so tasty. Invented for the First Queen of Italy, the Queen of Savoy, the colors of pizza are not accidental. The red sauce, white cheese, and green basil represent the Italian flag and the new country.

Pasta (Dough)
-2 lb Italian “00” flour or all-purpose flour
-2 cups warm water
-1 oz leavening agent

-1 lb crushed tomatoes
-olive oil
-oregano and basil to taste
-garlic to taste

-1 lb mozzarella cheese


Step 1.
Create a well in the center of the flour and add leavening and water into center. Add salt around edge.

Step 2.
Knead dough for 15-20 minutes until soft and smooth.

Step 3.
Shape dough into a ball and let it rest for 30 minutes.

Step 4.
Separate the dough into 4 parts and flatten them into disks using their fingers.

Step 5.
Use a spoon to add sauce into the pizza dough. Then place pieces of mozzarella on top. We used Mozzarella de Bufala, Buffalo Mozzarella – the mozzarella of the gods!

Step 6.
Heat the oven to 480F and then bake for 5-6 minutes, until the crust is golden and the cheese is melted. Once done, drizzle with olive oil and serve. It turned out very good our first time!
